Vegetable Oil - 1 tsp
Boneless Beef, small dice - 1 cup
Red Onion, chopped - 1 cup
Garlic, chopped - 1 tbsp
Ginger, chopped - 1 tbsp
Mushroom, sliced - 1 cup
Red Pepper diced - 1/2 cup
Jalapeno, seeded - 1/2 tsp
Cumin Powder - 1tsp
Chili Powder - 1 tsp
Cilantro leaves - 1/2 cup
Spinach - 1 1/2 cup
Beef Broth - 4 cups
Salt & Pepper to taste
1. Put the cilantro, jalapeno and spinach in the blender and process with one cup broth. Reserve.
2. Heat the oil in a saucepan over high heat, and when it is very hot sear the beef pieces until they are golden brown.
3. Add the onions, peppers ginger and garlic to the saucepan; stir and let them cook until the onions are soft and translucent. Add the chili powder , cumin powder and continue to sauté for one more minute.
4. Add the remaining broth and simmer for 15 minutes.
5. Pour the cilantro mix and turn the heat to medium heat, and cook for another 20 mins
6. Serve Hot,
