Butter - 1/4 cup
Onion, finely chopped - 1 cup
Red Bell Pepper, finely chopped - 1/4 cup
Dry Mustard - 1 tbsp
Smoked Paprika - 1 tbsp
Mayonnaise - 1/2 cup
Panko Bread Crumb - 1 cup
Orange Zest - 1 tbsp
Italian Parsley, chopped - 1/4 cup
Egg, lightly beaten - 2 ea
Crab meat, cooked - 1 1/2 lb
Salt & Pepper - To Taste
Vegetable Oil - For frying
1. In a frying pan, melt the butter and saute the onions and bell peppers, till they are cooked.
2. In a large mixing bowl, mix together, all the ingredients except the bread crumbs and Vegetable oil.
3. Form the crab mix into 8 even size patty, dredge it with the breadcrumb and set aside.
4. Heat oil in a pan, and fry the crab cakes, till they are golden brown, evenly on all sides.
Serve with a slice of lemon and your choice of dipping sauce.
